A low-carb diet can offer many health benefits, but you may struggle to come up with meal ideas that fit your busy schedule. Even if you’re not the most creative person in the kitchen and only have a few ingredients at hand, it’s easy to make tasty, low-carb meals that require fewer than 15 minutes of prep time.

Meal 1. Tofu-Based Pizza

If you miss pizza on your low-carb diet, then you’re going to love this.

You may just find it tastes even better — without the unhealthy ingredients many pizza varieties include.

This recipe is easy to modify, and you can add any low-carb ingredients you want — vegetables, mushrooms, different cheeses, and so on.

Ingredients: Tofu, onions, vegetarian bacon (e.g. tempeh, salmon rashers), salsa, spices, garlic powder, and shredded cheese.


  1. Finely chop your onions and cut some of the ‘bacon’ into small slices.
  2. Mix the tofu, salsa, onions, spices, and garlic powder at the bottom of a baking dish.
  3. Sprinkle shredded cheese on top and cover with additional ‘bacon’ slices
  4. Place in the oven and heat at 180-200°C (360–395°F) for 30–40 minutes, until the ‘bacon’ and cheese look crunchy.


  1. Add a can of peeled diced tomatoes, Mexican style, to the mixture.
  2. Add some finely cut cauliflower florets, or any other low-carb vegetable, to the mixture.
  3. Put the cheese on top after 30 minutes.

Meal 2. Veggi Burger without Bun

It doesn’t get much easier than this: a bunless burger with two different kinds of cheese and a side of raw spinach.

Ingredients: Butter, vegetarian patties, cheddar cheese, cream cheese, salsa, spices, spinach.


  1. Add butter to a pan and turn up the heat.
  2. Add the patties and spices.
  3. Flip the patties until close to being ready.
  4. Add a few slices of cheddar and some cream cheese on top.
  5. Reduce the heat and put a lid on the pan until the cheese melts.
  6. Serve with raw spinach. You can drizzle some of the fat from the pan over your greens, if you like.
  7. To make the burgers even juicier, add some salsa.

Ingredients: Canola (or coconut) oil, fresh vegetables or frozen vegetable mix (carrots, cauliflower, broccoli, green beans), eggs, spices, spinach (optional).


  1. Add canola oil to your frying pan and turn up the heat.
  2. Add vegetables. If you use a frozen mix, let the vegetables thaw in the heat for a few minutes.
  3. Add 2-3 eggs.
  4. Add spices — either a blend or simply salt and pepper.
  5. Add spinach (optional).
  6. Stir-fry until ready.
